I love apple cakes that are loaded with apples and this version of the classic French apple cake is healthified (it’s a word!) to the max.

I used coconut oil instead of butter and coconut sugar instead of while sugar. If you’re ok with wheat you can definitely make it with whole wheat flour instead of spelt. I love using spelt in my baked recipes because it is much lower in gluten and much more digestible. For me, spelt equals a happy tummy, less bloating and less inflammation than wheat. This cake is also VERY EASY to make.

Here’s the recipe:

Whist together:
1/3 cup coconut oil
1/2 cup coconut sugar
1 teaspoon vanilla extract

Add:
1/2 cup unsweetened apple sauce
2 large organic eggs
Whisk until creamy

Mix together:
1 cup whole spelt flour
1 teaspoon baking powder
pinch of salt
Combine with wet ingredients

Fold in:
2 large apples, cored and cubed
I used Gala, but use any variety you like.
If you use organic, don’t bother to peel them! If you don’t, peel them.

Spoon butter into an oiled cake pan

Mix and sprinkle on top:
1 tablespoon coconut sugar
1 teaspoon cinnamon

Bake at 350º F, 180º C for about 40 minutes until a toothpick inserted comes clean and top is golden.

Serve warm.
