Do you think sweets are unhealthy?
I hear it from some of my clients: “I want to eat clean but I love cake too much.” Well, me too!
I personally do not like the term “clean eating”, it sounds severe and restrictive to me. I prefer to say that I eat mostly whole foods. You know, foods that are natural, healthy and not processed to death, without additive, chemicals and artificial ingredients.
And gladly, many desserts can fall into that categories, probably not store bought donuts, but with a little guidance you can whip up delicious sweets at home.
Dates are a wonderful sweetener and can be the base for many treats and incorporated into cakes and muffins. They have lots of fiber and natural sugar. They are filled with minerals like iron, calcium, magnesium, potassium and zinc and they also have lots of vitamins like vitamin A, vitamin K, thiamin, riboflavin, niacin and folate.
So don’t hesitate to whip up this easy-peasy recipe of “snowballs”, perfect with a hot or cold drink!
30 Medjool dates, pitted
1/2 a cup of cashews
Juice of one orange
1 tablespoon grated orange zest
1 teaspoon vanilla extract
Put all ingredients in your Vitamix or other powerful blender/food processor and blend until a thick paste forms. Transfer to a bowl and refrigerate to set about 30 minutes.
With wet hands form balls and roll them in shredded unsweetened coconut. The snowballs are soft, if you want them firmer add more nut and/or less orange juice. Store in the fridge.
