They are grain free!

1 1/2 cups of steamed, peeled sweet potato, mashed with fork
3 eggs, lightly beaten
1 cup of unsweetened milk (soy, almond, coconut)
2 tablespoons of coconut oil, melted
3/4 cup almond meal
1/2 cup coconut flour
1 tablespoon stevia extract
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 tablespoon cinnamon
A sprinkle of cloves
A sprinkle of nutmeg
Mix wet ingredients until smooth
Mix dry ingredients and stir well
Mix wet and dry together until combined
Oil 12 muffin cups, put in muffin tray and fill with batter
Bake at 375° for about 35 to 40 minutes
