This soup has a wonderful sweet and rich flavor from caramelized onions.
It is high in protein and fiber and it’s very filling.
Serve with with cooked grains and vegetables for a complete meal.

Peel and dice 2-3 large onions
Heat up a little olive oil in a large frying pan and sauté the onions with a little salt until they start to brown. Cover and cook on low flame for 40-45 minutes, stirring occasionally until the onions are caramelized. If they get too dry you can add a little water or broth.

In the meantime place 1 cup of red rinsed lentil in a sauce pan.
Add plenty of water or broth and bring to a boil.
Add salt, pepper, cumin, paprika and curry.
Cover and simmer for 40 minutes.
Add the caramelized onions and cook for 5 more minutes.
Blend and serve.

You can serve it with fresh chopped herbs like cilantro or parsley.
Or sprinkle with seeds like sesame, sunflower or pumpkin.
And add a squeeze of lemon or lime juice.
