My Moroccan grandmother often made this dish and served it with couscous. Fava beans have delicious, distinctive, mildly sweet taste and this dish is layered with wonderful flavors of savory cumin, fresh cilantro and zingy lemon. I love to serve it over steamed vegetables.
Fava beans are an excellent source of protein, fiber, folate, phosphorus, potassium, magnesium, calcium, iron, vitamin K and vitamin A.
They:

- Regulate blood pressure
- Make skin healthy and glow
- Calm the nervous system
For this recipe you will need 1 cup of dry Fava beans, soaked overnight.
Saute 1 large chopped onions in 2 tablespoons of coconut oil
Add 2 cloves of garlic, minced
Add 1 teaspoon of cumin, 1 teaspoon of smoked paprika, 1/2 teaspoon of turmeric, a heaping tablespoon of tomato paste, salt and pepper to taste
Continue to cook the onions until soft
Add the soaked beans and stir to coat in the onion and spice mixture
Add 3 cups of water, bring to a boil and reduce heat
Cover and simmer for 45-50 minutes, stirring occasionally and adding more water if necessary until the beans are soft and start to fall apart
Add 1/2 a bunch of chopped fresh cilantro and turn heat off
Let the beans rest for 5 minutes, covered
Serve with a squeeze of fresh lemon juice
