My son is a carbotarian
You know… he loves carbs
(Like his mommy)
He can live on pasta, rice and crackers
So as a mom I have to be inventive
And come up with clever ways
For him to eat his veggies and proteins
The following meatballs recipe
Is a huge hit
He loves them
I love them
My husband loves them
They are full of lean protein and veggies
So it’s a win win recipe!

To make them, buy a package of ground lean turkey
I get the hormone/antibiotic free

Put in blender (vitamix works best):
A handful of kale or spinach
One small carrot
A handful of broccoli
2-3 cloves of garlic
Salt and pepper to taste
2 cubes of frozen basil (or a few leaves, fresh)
One organic egg
1/2 cup of organic oatmeal, uncooked
Blend until creamy
Mix well with ground turkey

To make sauce
Heat up 2 tablespoons of olive oil in large saucepan
Add sliced garlic and brown
Add 1/2 a can of organic tomato paste, salt, pepper, sweet paprika and italian seasoning
Mix well with whisk while adding 3-4 cups of water
Bring to a boil
While it’s boiling, take tablespoonfuls of the turkey mixture and form into balls
Work with wet hands so it does not stick
Drop the balls into the tomato sauce
Cook on low flame, covered for about 30 minutes
Until the meatballs are done and the sauce thickens

Serve on top of:
Pasta
Rice
Baked sweet potato
Spaghetti squash
Steamed vegetables

Makes about six servings that would not last very long.
