I think of cauliflower as queen of vegetables. One, because it’s one of my favorites. And second, because it is a super hero when it comes to delivering health. A member of the cruciferous vegetable family, cauliflower is filled with cancer fighting nutrients, fiber, vitamins and anti oxidants.
I have so many favorite cauliflower recipes; I love it in soups, I love it mashed and creamy, I love it curried, I love it roasted and I love it raw with a good dip.
This recipe combines the crunchiness of lightly steamed cauliflower with tangy roasted peppers in a light vinaigrette dressing. It is a simple, colorful and delicious salad that can take the center stage at any meal.
Wash one head of cauliflower and separate into florets
Place in a steamer basket and steam for 3-4 minutes
Let the cauliflower cool and transfer to a bowl
Add a jar of red and yellow roasted peppers, chopped
Vinaigrette dressing:
2 tablespoons of olive oil
Juice of one lemon
Salt and pepper to taste
Pour the dressing over the salad and mix well.
Serve sprinkled with chopped parsley.
Variations:
Add diced red onions for extra sharpness
For added protein and a complete meal add cooked chickpeas
