Who doesn’t like ice cream!

Here is a
Dairy free
Low sugar
And so amazingly delicious version of ice cream
It will make you scream!
With delight!

Put the following ingredients in your high speed blender (I use my Vitamix):

1 cup of frozen blueberries (I used wild blueberries)
1 ripe frozen banana
2 heaping tablespoons of cashews
A little water for processing
A teaspoon of vanilla extract
A little stevia extract

Blend until smooth and transfer to bowls (makes 2-3 servings)

To make the chocolate topping heat up one tablespoon of coconut oil
Add 2 rows of very dark organic chocolate (I used 90%)
You can add a teaspoon of raw honey to make it sweeter

Heat just until the chocolate is melted

Remove from heat and drizzle, hot, on top of the ice cream

The contact of the coconut oil with the frozen ice cream will harden the chocolate

Sprinkle with shredded coconut or chopped nuts
