It would be very hard for me to pick a favorite vegetable, I love so many, but if I absolutely had to choose I will pick cauliflower. I would crown cauliflower the queen of vegetables! My mom used to make a breaded, fried cauliflower dish that was cooked in curry sauce and it was one of my favorite dishes as a child.
Cauliflower is a member of the cruciferous family, a group of vegetables that are knows for their high nutrients, high antioxidants and cancer fighting powers, so it’s not only yummylicious but a super-vegetables that is oh so good for you.
Roasted cauliflower is so ridiculously easy to prepare and what i love about it is how versatile it is, with just a few switches of spices and herbs, I can create this quick dish in many different flavors.
Basic Roasted Cauliflower
Wash a large head of cauliflower, separate it into florets and toss with 2 tablespoons of coconut oil (melt it first if it’s solid) and a pinch of salt. Arrange it in a single layer on a parchment lined baking sheet. Roast at 400º F, 200º C for about 20-25 minutes, until they edges turn brown.
That’s it! It is absolutely delicious just like that! Now you can start playing with flavors.
Curried Roasted Cauliflower (pictured)
Add freshly ground pepper and sprinkle with curry powder.
Italian Roasted Cauliflower
Add sliced red peppers and sliced fresh garlic, toss with freshly ground pepper and dried Italian seasoning.
Asian Sesame Roasted Cauliflower
Skip the salt and toss with soy sauce, crushed garlic, chopped ginger and add a dash of toasted sesame oil. Garnish with toasted sesame seeds when serving.

Absolutely brilliant! I make roasted cauliflower all the time, it’s a great side for all kinds of mains, and it works great on its own too. I also like cauliflower mash, and cauliflower tabbouleh, and I make a wonderful creamy cauliflower soup… Yes, I guess it’s one of my favorite veggies. Although I cannot really crown in… the eggplant and the zucchini are still fighting for the top spot.

I absolutely love roasted cauliflower! I usually sprinkle garlic powder or even minced garlic with the oil and brush it on the veggies, then pop them in the oven. I can eat a ton of it!
Yum!! I love roasted cauliflower and am grateful to have some fun variations to try. It is such a versatile vegie. Our favorite is simply olive oil and sea salt, maybe some fresh garlic. Can’t wait to try out something different.
This is one of my favorite ways to make cauliflower. Love the idea of using coconut oil instead of olive oil for a twist and a little curry powder to give it some kick. Now I’m inspired to make it this weekend…thank you Rachel xo
