My family has a fall tradition of going out of the city to upstate New York. We go hiking in the woods, visit the lakes, stroll along the streets of small towns, take it the gorgeous fall foliage and go apple picking.
And then it’s a whole month of apple recipes! Cakes, muffins, pies, crisps, home-made apple sauce and one of my favorites: apple butter!
This apple butter recipe is easy and has a rich, not too sweet taste. If you like it sweeter, you can add more sweetener. It is cooked overnight (10-12 hours) in a low temperature oven, you can also make it in a slow cooker.
Caution: your house will have the amazing smell of baked apples all day!
This recipe yielded 2 full jars, you can adjust the quantities to make less or more. Wash and peel about 30 medium apples.
I used a variety of gala, honey crisp and golden delicious, but any apples will do.
Cut the peeled apples into quarters, remove the core and cut each piece in half.
Put all the apples in a slow cooker or an ovenproof large pot.
1 teaspoon of cinnamon
Grated zest of 1 orange
1 tablespoon of blackstrap molasses
2 tablespoons of raw honey or 2 drop-fulls of liquid stevia extract (you can use stevia powder as well)
Mix well until all the apples are well coated with the cinnamon and sweetener.
Cover and bake at 225º F/107º C for 10-12 hours or in a slow cooker on low for 10-12 hours.
Take out of the oven and let the apples cool a bit.
Blend. You can use a blender but usually the apples are so tender that they fall apart as you mix them.
Store in a sealed glass jar in the refrigerator.
You can use apple butter in many different ways:
Spread on a sandwich with peanut butter or almond butter
Put on top of hot oatmeal
Serve with pancakes or waffles
Mix with yogurt
Or eat it the way my son does, with a spoon! He had two bowls as soon as it came out of the oven.
