A chocolate truffle that is healthy and contains no refined sugars? Sign me up!

I love chocolate and i love discovering ways to make chocolaty desserts that are good for you.

The cacao bean which is the base of chocolate is one of the healthiest plants on the planet, containing a wide variety of minerals and antioxidants. The problem is that most commercial chocolate is stripped of nutrients and β€œboosted” with refined sugar, milk and caffeine.

These truffles contain dates for sweetness, which are full of fiber and nutrients, cashews, which are high in protein and healthy fats and the combination of both make for a healthy, slowly absorbing, very satisfying combination which will not spike your blood sugar. It is also ridiculously easy to make.

In your food processor put the following ingredients and blend until a paste forms, I like mine a little chunky but you can make it smoother if you like:
15 Medjool dates, pitted
1 cup of raw cashews
2 tablespoons of raw cacao
1 teaspoon of vanilla extract

Optional: you can add 1-2 tablespoons of flax seeds

Use a teaspoon to scoop up the paste and form into balls, roll in shredded, unsweetened coconut and keep refrigerated.

These truffles are so delicious and rich and satisfying, one or two are enough even for a chocoholic like me!
