My mom made this soup very often
The smell of it cooking
Filled the house
And we would all look forward
To sitting around the table
And ladle it into our soup bowls
Here is my version of it
I make it lower in fat
By boiling the chicken first
And then changing the water and removing the skin
And I vary the vegetables each time
Put a package of organic chicken in a large pot
Use any parts you like, a whole cup up chicken, legs, wings, breast
Cover with plenty of water and bring to a boil
Let boil for 5 minutes, take the chicken out, change the water
You can remove the skin at this point
Return the chicken to the pot
Add peeled and cup up vegetables
(Organic if possible)
I used:
Pepper
Tomato
Onion
Celery
Zucchini
Potatoes
Cilantro
Parsley
(you can also use sweet potatoes, butternut squash, bok choi, cabbage…)
Add salt, and a Yemenite spice called Hawaij
(If you can’t find it add cumin, turmeric, black pepper, and a tiny bit of cardamom and cloves)
Add plenty of water and cook covered for about an hour.
You can make a big batch, portion and freeze for future use.
