I love arugula (aka rocket)
Peppery and with a nice bite
It is great as a salad green
And I often use it in my green smoothies
Sofrito is a Spanish cuisine paste
That is used to flavor rice, soups and stews
And can be created
In many versions and flavors
This version is extra peppery
And super easy
And can be used to flavor
Mixed with olive oil and vinegar for salad dressings
Mixed with avocado for guacamole
Mixed with eggs for yummy omelets
Blended with cooked chickpeas and tahini for green hummus
And any other way you can think of
Put in blender:
5-6 cloves of garlic, peeled
2 peppers, washed and seeded
A handful of fresh washed cilantro
A handful of fresh washed arugula
You can keep some in a jar in the refrigerator and use within days.
And freeze the rest in ice cubes for future use.
I did not add any seasonings so when using the Sofrito to your food add salt pepper, lemon juice, lime juice and spices as needed.
