Quinoa is an amazing grain that is wonderful to have all year round. If you’re not a familiar with cooking quinoa (yet), read all about it here, I am sure you will fall in love with this super grain.
The following recipe is great warm or chilled.
It is filled with protein from the quinoa, and wonderful nutrients from the vegetables.
The beets give the salad a pretty bright pink color.
Rinse one cup of quinoa
(I used white and red, but use any kind you have)
Cook until done.
Mix into the cooked quinoa:
2 grated carrots
1 grated beet (raw)
1 diced red pepper
Chopped dill (I used 4 frozen dill cubes by Dorot)
Juice of 2 lemons
2 Tablespoons of olive oil
Mix well and serve.
