Cold noodles in sesame sauce was one of my favorite take out foods back when I used to order late night meals from the local Chinese restaurant. A health overhaul later I created this healthy and very delicious version of it.
You can use any noodles you like, my favorite noodles of the moment are Aduki bean noodles. They are full of fiber and protein, and all the nutritious goodness of beans.
Cook the noodles according to package directions and rinse with cold water when done.
Place noodles on a plate and top with:
1 cucumber, cut into thin strips
1 carrot, cut into thin strips
1/4 red cabbage, thinly sliced
To ,ake the sesame sauce place all the following ingredients in a blender and process until smooth. Adjust the amount of water to desired thinkness.
1/2 cup of raw sesame tahini
1/2 cup of water
1 tablespoon of nut butter (almond, peanut, cashew)
2 tablespoons of soy sauce
2 cloves of garlic
2 tablespoons of apple cider vinegar
1 tablespoon of honey or molasses
Drizzle sauce on top of the noodles and vegetables.
Leftover sauce can be refrigerated in a sealed glass jar and used to top salads or steamed veggies.
