Who doesn’t like a crunchy and delicious cookie?

Most store bought cookies are filled with white flour, white sugar and unhealthy oils, a combination that sends our blood sugar levels to extremes, creates uncontrollable cravings and contributes to a staggering number of health issues.

So what’s a cookie monster to do?

Make these amazingly yummylicious and healthy cookies instead. They are easy as 1-2-3 and they are rich with lots of good stuff which spells: satisfying!!! Unlike commercial cookies that “make” you eat the entire package, one or two of these cookies will be enough to satisfy you and bring a smile to your taste buds.

Here’s how to make them:

1 cup cashews
1 cup rolled oats (not instant oats)
1 cup whole spelt flour (lower in gluten and more digestible that whole wheat flour but you can use whole wheat instead)

Put in blender or food processor and grind to a flour consistency. Place in a large bowl.

In a separate bowl whisk together
1/2 cup coconut oil
1/2 cup maple syrup
1 teaspoon vanilla extract
Until well blended

Mix dry and wet ingredients.

With wet hands form into balls and flatten on parchment lined baking sheet. Make a thumb print in the middle of each cookie and fill with a cashew, almond or whole fruit jam.

Bake at 350º F or 180º C for 15-20 minutes.

The cookies will come out soft and warm but will get crispy as they cool, they are delicious both ways!
