My favorite salad dressing is Carrot-Ginger. I first had it at Souen, a health food restaurant in New York City, and I set out to create my own version of it. It has the wonderful combination of sweet from the carrot and apples and zingy from the sharpness of onions and ginger.

Carrots infuse it with beta-carotene, a powerful anti-oxidant that boosts heart health, improves vision and slows down the aging process.

Put all the ingredients in your blender and process until smooth. I love using my Vitamix to create a very smooth consistency in seconds.

2 carrots, washed and peeled
1 inch piece of fresh peeled ginger
1/8 peeled onion
1/4 apple
Teaspoon mustard
2 teaspoons soy sauce
4 tablespoons apple cider vinegar
2 tablespoons olive oil
1 teaspoon toasted sesame oil
2 tablespoons water

And voilà! You have created a dressing that is great on everything!

Serve it on top of :
Salads
Steamed vegetables
Cooked grains
Beans
Steamed fish
And anything else that can use a boost of flavor.

I especially love it on top of my Healing Meal.
