The smell of apples and cinnamon fills the kitchen and flows through the house. Ahh… Autumn harvest always makes me come up with apple recipes to use up my apple picking pile.
This recipe is
Gluten free
Grain free
Uses no refined sugar
And is filled with good for you ingredients.
~ Apples are high in vitamin C, vitamin K and fiber, and are great for digestion.
~ Almond and coconut flours are high in protein and healthy fats.
~ Raw honey contains trace minerals and is anti-bacterial and anti-fungal.
I recommend to use organic ingredients whenever possible.
Mix together dry ingredients:
1 cup blanched almond flour
1/4 cup coconut flour
Pinch of sea salt
1/4 teaspoon of baking soda
Whisk together wet ingredients:
1/4 cup coconut milk
1 egg
1 tablespoon of raw honey
(add another tablespoon if you want your muffins sweeter)
Mix dry and wet ingredients until combined.
Finely dice 2 apples and sprinkle with a teaspoon of cinnamon.
Fold apples into the batter.
Make Cinnamon drizzle by warming lightly (don’t boil) and mixing:
2 tablespoons of raw honey
1 tablespoon of coconut oil
1 tablespoons of cinnamon
Spoon half the batter into 6 lined muffin tins, cover with 1/2 the cinnamon drizzle, spoon the rest of the batter and cover with the rest of the drizzle. I like to take a wooden skewer and swirl the batter, so the cinnamon drizzle gets everywhere!
Bake at 325º for about 25 minutes until muffins turn golden and a knife inserted to the center comes out clean.
These muffins come out gooey and are best eaten warm, but they are still plenty yummy the day after.
