Cauliflower is one of my favorite vegetables. And indian food is one of my favorite cuisines. So an indian cauliflower dish sends me to food heaven with happy giggles!
Cauliflower is a super healthy vegetable as well. A member of the cruciferous family, it is loaded with cancer fighting nutrients, promotes a healthy heart, reduces inflammation, boosts brain health and contains many vitamins and minerals. Make sure to eat this vegetable regularly.
This dish combines the wonderful benefits of cauliflower with two other super foods, ginger and turmeric, making it a real gem of healing, detoxifying and delicious food.
Heat 2 tablespoons of ghee of coconut oil in a large frying pan
Add one diced onion and cook for 2 minutes
Add:
3 cloves of minced garlic
1 tablespoon of grated fresh ginger
1 tablespoon of grated fresh turmeric (or two teaspoons of turmeric powder)
2 teaspoons of cumin
1 chopped chili pepper (or to taste)
Salt and pepper to taste
Sauté all the spiced for 2-3 minutes
Add 2-3 finely diced tomatoes (you can also use a can of crushed tomatoes)
A little more water to create enough sauce
Add one whole cauliflower cut into florets
3-4 potatoes, cubed
1 cup of sweet peas, fresh or frozen (optional)
Mix well so the vegetables are fully coated in the sauce
Cover and simmer for 20-30 minutes until the vegetables are soft
Add 2 teaspoons of garam masala and mix well
Add lots of chopped fresh cilantro
Turn off the heat and let the dish stand cover for a few minutes before serving
Great on it’s own, or on top of rice, quinoa or other grain
